We attended Penang Bon Odori Festival and thinking of what to eat. There were so many stalls around. The Japanese stall that sells okonomiyaki (Japanese pancake) from Hiroshima has the longest queue. It took us half and hour to purchase the delicious okonomiyaki.

What is Okonomiyaki? Okonomiyaki is a Japanese savory pancake. Depending upon the region of Japan, okonomiyaki is cooked differently. Hiroshima style okonomiyaki, is unique to the prefecture of Hiroshima where the pancake ingredients are cooked in separate layers. Hiroshima okonomiyaki includes vegetables, egg, meat, and is commonly served with a layer of noodles as well. The noodle choices are soba, which refers to yakisoba or chuka style noodles, but not to be mistaken with buckwheat soba noodles which are not used in this dish.

A typical food of Hiroshima is Hiroshima-style Okonomiyaki (Japanese-style pizza). The dedicated sauce is “Okonomi Sauce”.
This sauce, made with several types of vegetable and fruit ingredients such as tomatoes, onions, apples and dates, and with spices, is thick, featuring a very rich and sweet taste.
In addition to ordinary okonomi sauce, there are several other types such as hot spicy flavored sauce and yakisoba sauce. Some Hiroshima-style okonomiyaki restaurants even produce their own original sauces and sell them to customers.
With its unique sweet flavor, okonomi sauce is often used not only for Hiroshima-style okonomiyaki but also deep-fried food.
